The only logical choice here is that you've succesfully led a manhunt. Cavalry will grant you more skill in two handed weaponry while Scouts is catered more towards the ranged Bow and Riding. The choice here purely depends on you as both of these youth picks are excellent. There's two choices as far as youth goes: trained with cavalry and rode with the scouts. Tactics is useful for late game when you start deploying your army as it lets you plan things much better.
Bow is an excellent ranged weapon that is mostly preferred for new players as a lot of other ranged weapons are mostly throwables. This will give you +1 Skill to Bow and Tactics. Since this is a beginner build mostly focused towards combat, the only logical choice here is the hunted small game adolescence. Athletics is also granted by attention to detail, which is a popular choice for arena. This allows your build to become a bit more diverse in terms of combat. On the other hand, attention to detail gives you one handed combat mastery meaning that you can use any one-handed weapon with a shield in case the Poleaxe and Lances aren't for you.
